History:
Livarot takes its name from the village of Livarot in Normandy’s Pays d’Auge region, where its production began. It was first mentioned in 1693 by Auguste-Robert Pommereu and later in Thomas Corneille’s 1708 dictionary. By the 19th century, Livarot was the most consumed cheese in Normandy, cherished for its robust flavor and versatility. Today, its production remains localized to a few districts in Calvados and Orne, maintaining its authenticity and regional identity. -
Fabrication:
The traditional fabrication process begins with partially skimmed pasteurized cow’s milk. The milk is matured, then curdled and cut into large cubes before being molded.
