The Grossane olive is found mainly in the south of the Alpilles. The olive is picked by hand, selecting the largest and most ripe ones. They are then demineralised. It is very round, has a lot of flesh, a small stone and is very juicy. Ideal for the use of olive oil, its bitter removal is only done with coarse salt.
