  • History:
    The origins of Munster are intertwined with the history of the monastery established in the Fecht Valley in 668 by Benedictine monks from Italy. Created to sustain their community, the cheese takes its name from the Latin word Monasterium (monastery). Munster’s legacy grew alongside the town that developed around the monastery, and it became a part of the cultural and culinary identity of the region.

  • Fabrication:
    Munster is traditionally made using milk from two milkings (morning and evening). After being tied, the milk is curdled with rennet and the resulting curd is cut into small grains. Following 1–2 days of molding and light salting, the cheese is transferred to ripening cellars where it rests on wooden racks. Over the 2–3 months of maturation in a humid and temperate environment, the cheese is carefully washed and turned, allowing it to develop its characteristic strong aroma and flavor.
